Quinoa Avocado Salad

Ingredients:

  • 1 cup Quinoa

  • 1 ripe Avocado   

  • 1/4 teaspoon salt

  • 1 cucumber

  • 1 red pepper

  • 2 leaves of romaine lettuce

  • 10-12 leaves of spinach

  • 1 green chilly

  • 1 teaspoon olive oil

  • 1 spoon Goji berries   

  • 1 spoon dried cranberries

  • 2 spoon nuts

Recipe:

1. Boil Quinoa in 2 cups water. Add salt and let it cook.

2. After fully cooked, keep it aside and let it cool.

3. Chop cucumber, red pepper, lettuce, spinach and chilly.

4. Add the chopped vegetables and olive oil to quinoa.

5. Mix it well in a large bowl.

6. Garnish with goji berries, dried cranberries and nuts.

7. Garnish with plenty of avocado slices.

Tip: If you are storing the leftovers, add good amount of lime juice to the salad to keep the avocado fresh.
